Shopping List for Making Zucchini alla Pizzaiola in Jars
- 3 zucchini (approximately 14 oz)
- 150 g mozzarella (5.3 oz)
- 30 g Grana Padano DOP (grated, 1 oz)
- 200 ml tomato pulp (7/8 cup)
- 4 leaves basil
- 2 teaspoons extra virgin olive oil
- 4 pinches fine salt
What You Need for Jar Cooking?
- 1 Microwave
- 1 Jar 1-liter with thin seal
- 1 Mandoline
- 1 Colander
How to Make Zucchini with Tomato and Mozzarella in Jar Cooking
Wash and trim the zucchini, slice them lengthwise using the mandoline at its maximum setting. Place the slices of zucchini in the colander, salt them with 2 pinches of salt, mix and let them rest for about 20 minutes to remove the water content.
In the meantime, season the tomato pulp with the other 2 pinches of salt, the oil, and basil, and mix. Dice the mozzarella and pat it dry with paper towels.
Drain the zucchini slices and dry them using paper towels or a clean dishtowel.
Spread a third of the tomato pulp on the bottom of the jar, arrange some zucchini slices, add a couple of tablespoons of tomato, a bit of mozzarella, and continue until all ingredients are used. Sprinkle the grated cheese on top, clean the rim of the jar, close, and latch it.
Place the jar in the microwave and start cooking at your tested power (I use 600 W) for 10 minutes. At the end of the cooking, let the jar rest closed for at least 20 minutes. Once cooled, you can store it in the fridge, where it will keep for 15 days, thanks to the vacuum.

You can prepare the zucchini alla pizzaiola in jar cooking recipe in two 500 ml jars, for convenient single servings, cooking the two jars together for 10 minutes, always at your tested power. Remember, it’s a good practice to check the boiling times of the jars. Just boil the jars for an actual 4 minutes. This recipe shows its best if left to rest for at least 24 hours.
