A light eggplant recipe that you can keep for 15 days in the refrigerator, thanks to the vacuum that will form in the jar. The split eggplants get their name from the cuts made in the flesh after splitting the eggplant in half. The eggplant will be cooked in the jar flavored with simple ingredients like garlic, chili, and oregano. Clearly, small round eggplants should be chosen to fit into the jar. If you can’t find small eggplants, you can use low wide liter jars or cut them into pieces that can fit into the jar.

- 2 round eggplants (about 10.5 oz each)
- 2 chili peppers (small)
- 2 cloves garlic
- 1 teaspoon dried oregano (leveled)
- 4 tablespoons extra virgin olive oil (scarce)

This recipe is also great warm, unhook and place the jar in the microwave, set for 3 minutes, using the defrost function. Gently pull the gasket and serve.
Split Eggplants in Marinara Jar Cooking
Pour 0.42 cups (100 ml) of tomato pulp seasoned with oil, salt, and basil into the bottom of the jar, insert half an eggplant and add some pieces of caciocavallo cheese between the cuts. Cook for 5 minutes. In this case, the vacuum-sealed eggplants will keep for 1 week.
