- 1 Microwave Oven
- 1 Jar with thick seal for 500 g
- 1 Microwave Tray Crisp or heating plate
- 1 Cutting board
How to make eggplant sauce in a jar?
Wash the eggplant, cut it into small cubes, keeping the skin for a more robust flavor. Slice the onion. Spread the eggplant cubes and onion on the microwave non-stick tray and spray with a little oil, mix, and cook in the microwave for 8 minutes. To microwave the eggplants, you can use the Crisp function or alternatively, the combi function, microwave + grill.
Place the browned eggplant in the jar and season with the tomato pulp, salt, basil, and mix well. Clean the jar rim, close and latch. Place the jar in the microwave and start cooking for 6 minutes at your tested power (I use 600 watts).
At the end of cooking, let the closed jar rest for at least 20 minutes. Once at room temperature, you can store it in the refrigerator or open it*.
Rosella’s advice
*Remember that to open the jars, unlatch the clamp and put them back in the microwave for about 3 minutes or until they open. Avoid creating thermal shocks to the glass: if the jar is cold from the fridge, bring it to room temperature using the defrost function for about 3 minutes.
Sicilian-style Eggplant Sauce in jar cooking
Reduce the tomato pulp by 30 ml and add a few capers, 3 black olives cut into strips, and a small piece of sliced celery.
