In the recipe, you will find 2 versions, one with fresh octopus and another with frozen and thawed octopus. You will see that cooking times differ because mollusks and cephalopods become more tender and easier to cook when frozen. Fresh octopus, like octopus, squid, and cuttlefish, are tougher.

Shopping List for Jar Cooking Octopus

  • 12.7 oz octopus (fresh and cleaned)
  • 2 potatoes (about 5.3 oz each)
  • 8 cherry tomatoes
  • 2 cloves garlic (small)
  • 1 bunch parsley
  • 2 tsp extra virgin olive oil
  • 2 tbsp dry white wine
  • 2 pinches salt
  • 2 pinches pepper
  • 1 fresh chili pepper (optional)

What You Need to Make Octopus in a Jar

  • 1 Microwave Oven
  • 2 Jars 500 ml with thick gasket
  • 1 Small Bowl glass and microwave safe
  • Paper Towels

Procedure

  • Peel the garlic cloves, chop them, distribute them in the small bowl, and season with oil. Place the bowl in the microwave and sauté for one and a half minutes at 750 watts. Meanwhile, wash and halve the cherry tomatoes, peel, wash, and chop the potatoes, wash and chop the parsley. Wash the octopus and pat them dry very well with paper towels.

  • Distribute all ingredients in the 2 jars, trying to leave the potatoes at the bottom, drizzle with white wine, add salt, pepper, and chopped chili pepper. Clean the jar rims and latch. Shake the jars to mix the ingredients well.

  • Place a jar in the microwave and start cooking for 10 minutes at reduced power, by reduced power I mean one step below the tested power. In my case, the tested power is 600 watts and I cooked the octopus at 440 watts. If in doubt, find the instructions for jar cooking here.

  • In this case, the cooking will be for 6 minutes at tested power, I used 600 watts.

  • At the end of cooking, let the jars rest closed for at least an hour, so they will continue to cook at a low temperature and the jar will go under vacuum, allowing you to store it in the refrigerator for 15 days.

Rosella’s Tips

For this recipe, you can also use a single 1-liter jar with a thick gasket, cooking for 20 minutes. If you hear your jar boiling (whistling) too strongly, you can reduce the watts. I brought them from 750 to 500 watts.

Octopus Tentacles in a Jar

You can use octopus tentacles or slightly larger octopus. Remember, when purchasing frozen octopus, to check the net weight. The ice coating often reduces the weight by 30%.

  • How do you open vacuum-sealed jars?

    Unlatch the jar and place it in the microwave, start for 3 minutes on defrost (if the jar is cold), to acclimate it and avoid thermal shock to the glass. Then, start at your tested power for about 3 minutes or until the jar opens. Serve on plates and garnish with freshly chopped parsley.

  • Can I cook octopus in thin gasket jars (Weck)?

    I do not recommend it for this recipe for 2 reasons: the recipe is rich in liquids, making it difficult to manage cooking in thin gasket jars, and the post-cooking process is shorter.

  • Can I make baby octopus in jar cooking?

    Yes, without problems. As you can see in the photos, these are baby octopus (mistake by the fishmonger, and I realized it when I got home). There is no difference in cooking.
