- 1 1/2 cups zucchini (diced)
- 6 zucchini flowers
- 6 eggs
- 3 oz bacon
- 1 tbsp grated Parmesan
- to taste salt
- to taste pepper
- to taste chopped parsley
- 1 clove garlic (minced)
- 2 tbsp extra virgin olive oil

Steps
Let’s get cooking
Dice the zucchini into small cubes, heat the pan with 2 tablespoons of extra virgin olive oil, once the oil is hot, add the diced zucchini, and cook, stirring occasionally, for about 5 minutes.
Then add the bacon cubes and continue cooking for another 5 minutes, season with salt and pepper.
Meanwhile, wash the flowers, detach the petals, and set them aside.
Between one stir and the next, beat the eggs, add the minced parsley, the finely chopped garlic, salt, pepper, and grated cheese.
Beat everything together.
Now add the zucchini flower petals to the zucchini, stir for just a minute
As soon as they wilt…
pour the egg mixture on top.
Cover with a lid, lower the heat and cook for 5 minutes.
Then with the help of a lid, flip the omelette and complete cooking for another 3 minutes or so.
