  • 1 1/2 cups zucchini (diced)
  • 6 zucchini flowers
  • 6 eggs
  • 3 oz bacon
  • 1 tbsp grated Parmesan
  • to taste salt
  • to taste pepper
  • to taste chopped parsley
  • 1 clove garlic (minced)
  • 2 tbsp extra virgin olive oil

Steps

Let’s get cooking

  • Dice the zucchini into small cubes, heat the pan with 2 tablespoons of extra virgin olive oil, once the oil is hot, add the diced zucchini, and cook, stirring occasionally, for about 5 minutes.

  • Then add the bacon cubes and continue cooking for another 5 minutes, season with salt and pepper.

  • Meanwhile, wash the flowers, detach the petals, and set them aside.

  • Between one stir and the next, beat the eggs, add the minced parsley, the finely chopped garlic, salt, pepper, and grated cheese.
    Beat everything together.
