Microwave Meatballs in Sauce

Microwave meatballs in sauce, soft, tasty, and cooked in no time. Cooking meatballs in sauce with peas in the microwave is very simple, and you’ll discover many little tricks to make them perfect. Like the microwave meatballs, this recipe is really quick and energy-saving. A rich main course that can be transformed into a sauce for first courses, such as baked rigatoni, or gnocchi, or for making pasta with meatballs in a jar. Now let’s think about the recipe; the base will be a tomato sauce enriched with peas, to which we’ll add meatballs that are not fried but pre-cooked in the microwave, just enough to seal the meat.

Ingredients for the microwave peas sauce

  • 2 cups tomato puree
  • 1 1/3 cups frozen peas
  • 1.4 oz frozen mixed vegetables (celery, carrot, onion)
  • 2 tbsps extra virgin olive oil
  • 4 leaves basil (fresh or dried)
  • 2 pinches salt
  • 10.5 oz ground beef
  • 2.1 oz bread (stale)
  • 1 egg
  • 1 sprig parsley
  • 1 clove garlic
  • 1 tbsp Grana Padano cheese (grated)
  • 1 tbsp extra virgin olive oil
  • 2 pinches salt

Steps for the sauce

  • Distribute the chopped vegetables in a baking tray, add the 2 tablespoons of oil, and let it sauté in the microwave for 2 minutes. Pour the tomato puree over the vegetables, add the peas, salt, and basil, mix well, and put the tray back in the microwave. Cook for 8 minutes at 600 watts.

  • Meanwhile, prepare the meatball dough, soak the bread in water, put the meat in a bowl, and add the egg, cheese, chopped parsley and garlic, salt, and mix the ingredients. Squeeze the bread and incorporate it into the meat. Knead everything well and form meatballs.

  • Grease the bottom of the second tray, better if it’s a Crisp or warming plate, distribute the meatballs, put it in the microwave, and cook for 10 minutes using the Crisp or microwave + grill function. After about 7 minutes, turn the meatballs. Transfer the meatballs to the tray with the sauce, mix gently. Cook the meatballs in sauce again in the microwave for 5 minutes at 600 watts. Serve the microwave meatballs in sauce hot.

Extra tips

You can keep the meatballs in sauce for 24 hours in the refrigerator, covering the tray with cling film.
