How delightful is jar-cooked ricotta! A main dish ready in 5 minutes in the microwave, light and tasty. The ricotta will be velvety and have an enhanced flavor. I am often asked where my ideas for jar-cooking recipes come from… actually, I often find myself unable to sleep at night, thinking about offering you new things. Like the jar-cooked ricotta dessert, this recipe too will keep for 1 week in the fridge, vacuum-sealed. Thanks to the heat and the desire for light recipes, besides having a beautiful ricotta in the fridge, I prepared it today. Great recipe for cooking and preserving expiring ricotta we can’t consume right away reminiscent of the Greek-style baked feta. Here’s an extra idea: if you love pasta and ricotta, try using jar-cooked ricotta as a sauce, and a whole new world will open up!

- 1 pinch salt
- 2 pinches dried oregano
- 1 tbsp extra virgin olive oil (preferably spray)
- 9 oz cow's milk ricotta
- 6 Taggiasca olives

- 1 Jar 500 ml with thin gasket
How to Make the Jar-cooked Ricotta Recipe in the Microwave
Wash and cut the cherry tomatoes in half. Place them, cut side up, in a baking dish. Season the tomatoes with salt, sugar, oregano, and oil. Set the microwave to the Crisp function or the microwave+grill function, for 8 minutes, and cook the cherry tomatoes*.
Meanwhile, peel and slice the celery stalk, place everything in the jar, and season with oil. Cut the ricotta in half and recombine it. Place the ricotta in the jar and season with the cherry tomatoes, olives, and the other pinch of oregano.
Clean the rim of the jar from any impurities, close, and secure it. Set the microwave to an intermediate power between the tested power and half power, in my case 440 watts, for 5 minutes, place the jar inside, and start cooking. At the end, remove the jar from the microwave and let it rest closed for at least 20 minutes. Now the jar-cooked ricotta is ready, you can enjoy it warm or cold. Simply pull, very gently*, the gasket, plate, and serve*.
Tips for Jar-cooked Ricotta
Pre-cooking the cherry tomatoes is necessary to make them lose their vegetative water. If you prefer, you can caramelize the cherry tomatoes in a small pan.
The jar-cooked ricotta in the microwave will puff up during cooking, and gently pulling the gasket will ensure it doesn’t deflate. Use long-shelf ricotta or one that has lost some of its whey. If it releases a lot of water during cooking, let it drain before serving.
