The cinnamon blondies are a recipe of American origin, the lighter version of the more famous brownies. There are different versions, but today I chose to offer you one of the simplest but, in my opinion, one of the best, the cinnamon version. They are certainly not a healthy recipe, but sometimes a small indulgence is allowed.

Start the preparation of the cinnamon blondies by melting the butter in the microwave or in a small saucepan over low heat; let it cool.
Add the warm melted butter to the brown sugar and beat with a hand or electric mixer until you obtain a thick and frothy mixture.
Add the previously beaten egg and the vanilla extract and mix the mixture well with a spatula.
In a separate bowl, mix the flour, baking powder, and salt. Add the dry ingredients to the rest of the batter and mix well, being careful not to form lumps.
Transfer the blondie batter into a square pan measuring 8×8 inches.

Tips: these blondies keep in the refrigerator for about 5-6 days. They can also be frozen already portioned; in this case, they keep for about 2 months. You can further enrich the recipe with nuts or chocolate chips.
