Apricots in Jar Cooking

JAR-COOKED APRICOTS, another recipe for cooking fruit in a jar in the microwave, allowing you to preserve them for 15 days under vacuum. Like the jar-cooked peaches or the quick jar-cooked cherries, they are perfect to serve on a good fior di latte ice cream. I love summer fruit, and cooking it in a jar allows me to avoid wasting fruit and to preserve it. So, when I go to the market, I always stock up on seasonal fruits and, with some, I use the jar cooking technique to preserve the ripest fruits. You’ll love the wine and apricot syrup formed during cooking. In my opinion, they will also be perfect for topping a jar-cooked cheesecake, of course. This recipe seems very simple, and indeed it is, although it required a reduction in the watts. The fitting comparison is that of stovetops, because when you cook fruit, you need to lower the flame, and we lower the power! This way, I ensured that the juice didn’t overflow from the jar, inevitably dirtying the microwave, and gave the fruit a gentler cook.

Ingredients for jar-cooked apricots

  • 6 apricots (about 7 oz)
  • 2 tablespoons moscato (or dessert wine)
  • Half pod star anise
  • a quarter of a vanilla bean (even exhausted)
  • 1 teaspoon coconut sugar (or cane sugar or erythritol)

What you need to cook in a jar

  • 1 Microwave oven
  • 1 Jar with a 17 oz thin gasket

How to cook apricots in a jar

  • Wash the apricots well and divide them in half. Remove the pit and place the apricots in the jar. Season them with sugar, anise, vanilla, and sweet wine.

  • Clean the edge of the jar, close, and clip. Place the jar in the microwave and cook for 5 minutes at reduced power compared to the tested power, I used 440 watts on 600 watts of tested power. Find the water test HERE. Remove the jar from the microwave, using a cloth, and let it rest closed for at least 20 minutes. During the resting, the jar-cooked apricots will finish cooking, and the vacuum will form in the jar.

  • When the jar is at room temperature, you can store it in the refrigerator, where it will keep for 15 days. To enjoy the jar-cooked apricots, simply gently pull the gasket and serve them.

Additional tips on jar-cooking fruit

Cooking fruit, like apricots, in jars at reduced power is equivalent to “lowering the flame” on the stove, which will prevent unnecessary splashes.
