Microwave Gateau

The recipe for cooking gateau in the microwave without using the oven and waiting for preheating times. This Neapolitan potato pie, also called potato gattò, is a casserole of boiled potatoes stuffed with deli meats. Like the microwave cauliflower gateau or the microwave vegetable casserole, this recipe can also be filled as desired. For example, my daughter doesn’t like cooked salami, so I prefer to fill the gateau with provola, mortadella, or ham and sometimes add slices of hard-boiled egg. If you prefer, you can make the original gateau recipe and cook it in the microwave for the same cooking time. When I make the microwave-cooked gateau, I use generous amounts and boil the potatoes in the Instant Pot, so I can store it vacuum-sealed by preparing the gateau in jar cooking. It’s always convenient to have a jar of ready-to-eat gateau. At the end of the recipe, you’ll also find how to boil potatoes in the microwave.

Ingredients

  • 2.2 lbs potatoes (boiled and still hot)
  • 2 eggs
  • 3 tbsp butter (or extra virgin olive oil)
  • 1/3 cup Parmigiano Reggiano DOP (grated)
  • 1 clove garlic (optional)
  • 3 pinches salt
  • 2 pinches pepper
  • 2 tbsp breadcrumbs
  • 1 tbsp extra virgin olive oil
  • 3.5 oz Neapolitan salami
  • 5.3 oz mozzarella
  • 2.1 oz cooked ham (in a single slice)
  • 3.5 oz mortadella (or cooked ham)
  • 5.3 oz provola
  • 2 eggs (hard-boiled)

What you need to cook the gateau in the microwave

  • 1 Microwave oven
  • 1 Non-stick baking pan for microwave
  • 1 Bowl
  • 1 Potato masher

Procedure

  • While the potatoes are still hot, peel them and mash them with the potato masher, letting them fall into the bowl. Immediately add 30 g of butter, or the oil, the grated cheese, the salt, and mix with a fork; this way, they will melt well. Then add the eggs and mix again; finally, season with minced garlic, if you prefer, even minced parsley, and mix again.

    Tip: when mixing hot potatoes, avoid overworking them; otherwise, you risk a sticky and stringy potato dough.
     

  • The original gateau recipe requires cutting the deli meats into cubes, along with the mozzarella, and adding them to the gateau dough; if you prefer, proceed this way.

    Otherwise, grease the bottom of the heating or Crisp pan, sprinkle with a tablespoon of breadcrumbs, and then cover and level half of the potato mixture. At this point, cover with slices of mortadella, or ham, provola slices, and, if you prefer, even slices of hard-boiled eggs. Cover with the remaining mixture and level.

    Season the surface of the gateau with the remaining breadcrumbs and butter flakes or a drizzle of oil.

  • Place the pan in the microwave and start the combined microwave + grill, or Crisp, cooking for 15 minutes. At the end of cooking, let the gateau rest in the turned-off microwave for 5 minutes, and then slice and serve.

    Tip: if you have multiple power options with the combined function, choose the highest one.

Additional Tips

If you do not have a heating pan and/or prefer a ceramic microwave pan or a Pyrex pan, always cook with the combined function but for 18/20 minutes. The heating pan can overheat and conduct heat well to the recipe, thus reducing cooking times.

Quick Boiling Potatoes for Making Gateau

You can steam potatoes in the microwave; to do this, peel them and cut them into regular cubes. Distribute them in a large glass bowl and add half a glass of water. Cover the bowl with a sheet of microwave-safe plastic wrap and make 2 holes. Place the potatoes in the microwave and cook for 16 minutes at 800 watts. As soon as cooking ends, seal the bowl with another additional plastic wrap sheet. Let the potatoes rest this way for 10 minutes, as in the recipe for microwave pasteurized onions, they will finish cooking away from energy sources.

You can also cook the gateau in this special microwave heating pot; clearly, it will be taller. In this case, I recommend making 2 layers of filling.
