Ingredients for making lasagna cupcakes

  • 8 sheets egg lasagna (fresh)
  • 14 oz meat sauce (Bolognese style)
  • 7 oz mozzarella (or string cheese)
  • 2.8 oz Grana Padano cheese, grated
  • extra virgin olive oil (for brushing the molds)

What you need

  • 1 Muffin Tin
  • 1 Bowl

How to make lasagna cups

  • Bring a pot of lightly salted water to a boil.

    Meanwhile, pour the meat sauce into the bowl, add 2 oz of the grated cheese, and mix. Cut the mozzarella or provolone into cubes and mix it with the sauce.

    Dip one lasagna sheet at a time into the boiling water, count to 3 seconds, and then take it out with a slotted spoon. Place it on a cutting board and cut it into two squares. Then, overlap the sheets, staggering the corners.

  • Take the muffin cups or tin and brush them with a little oil. Place the two squares of lasagna in the cup and press lightly. Pour 2 generous tablespoons of meat sauce with cheese and set aside. Continue until the ingredients are used up.

  • Sprinkle the remaining grated cheese over the lasagna cups and preheat the oven to 350°F. Bake the cups for 30 minutes, then cover with a sheet of aluminum foil and continue baking for another 5 minutes. At the end of cooking, let them rest for 5 minutes, then plate and serve.

  • Place the muffin cups in the air fryer basket and cook at 340°F for 15 minutes, then increase the temperature to 350°F and continue cooking for another 3-4 minutes. Let rest and serve.

  • Using the same muffin cups, place them on a heating tray (Crisp) which you will place on a microwave stand. Cook for 12 minutes with combined microwave + grill function, choosing a low power (350 watts). Then, remove them from the stand and continue cooking for another 3 minutes. Let rest for 5 minutes and serve your lasagna cupcakes.
