Fluffy and fragrant apple pancakes, an easy and quick recipe to prepare a delicious breakfast different from usual. Also, if you are organizing a brunch, pancakes are a must! To prepare any kind of pancakes, you need few and simple ingredients that are usually always present in everyone’s pantry, with which you can make a batter by mixing them with a hand whisk or an electric mixer. Today’s recipe includes apples, which I preferred to grate, but they can also be diced into tiny pieces. The mixture is then cooked in a regular non-stick pan or a special pancake pan, which I prefer.

Ingredients for Apple Pancakes
- 1 2/3 cups all-purpose flour
- 3/4 cup milk
- 2 eggs
- 2 apples
- 1/4 cup sugar
- 2 tbsp vegetable oil (or 1.5 tbsp melted butter)
- 1 tsp baking powder
- to taste ground cinnamon
- 1 pinch salt
- to taste butter (or vegetable oil)

Preparation of APPLE PANCAKES
Place the eggs, sugar, milk, and a pinch of salt in a bowl; add the oil (or melted butter if you prefer) and beat with a hand whisk or electric beaters until well combined.
Add the flour, a few pinches of cinnamon, and the baking powder, sifting them; mix well.
Peel the apples, grate them with a large-hole grater (or alternatively, you can dice them into tiny pieces) and add them to the mixture; mix well.
Grease the special pancake pan by spreading butter or oil in the cavities with the help of a paper towel. (You can also use a small pan and cook them one at a time, or a large pan and cook 3-4 at once, in which case they will be a little irregular in shape but equally delicious).
Heat the pan and pour some mixture into the cavities.
When bubbles start to appear on the surface, the base is already golden, so flip the pancakes to the other side using a spatula, like you would an omelet (when I cooked my pancakes in the special pan, I lifted an edge with a skewer stick and inserted the spatula); let them brown on the other side as well, then remove them from the pan.
Continue with the rest of the mixture and as they are ready, arrange them on a serving plate.
Your apple pancakes are ready to be served. You can accompany them with maple syrup (my favorite), honey, fresh and canned fruit, jam and marmalade, hazelnut spread, whipped cream, butter, and peanut butter.
Notes
If you don’t like cinnamon, you can eliminate it or replace it with a few pinches of vanilla or grated orange or lemon zest.
You can use yellow or red apples.
