How to make microwave-cooked béchamel and have a perfect base in just a few minutes? Here are all my secrets! Velvety, aromatic, and versatile, béchamel is useful for various recipes. For example, to make microwave crepes or Bolognese lasagna in the microwave, these are just small examples of how many recipes can be made in the microwave, and having it ready in a few minutes is very useful. I always make a little extra, once it is warm, I transfer it into a glass container with a lid and place it in the fridge. It lasts up to a week. However, cooking béchamel in the microwave is so quick that it might not be necessary. If you only need half a liter of béchamel, halve the quantities and cooking time, considering the desired density in the last few minutes.   • 0.63 cups low glycemic index flour
  • Half teaspoon salt
  • 2 pinches nutmeg

  • 1 Bowl microwave safe glass
  • 1 Hand whisk

How to Make Béchamel in the Microwave

  • Cut the butter into pieces and place it in the bowl. Melt the butter in the microwave on low power for a couple of minutes.

    Work the butter with the hand whisk and then, add the flour little by little, always mixing the ingredients with the whisk.

  • Start adding the milk gradually, always stirring.

    Finish adding all the milk.

  • Flavor the béchamel with nutmeg and salt. Mix well again.

    Set the microwave at about 600 watts for 4 minutes, insert the bowl, and start it.

    After this time, mix the béchamel well, always with the whisk.

    The flour tends to settle at the bottom, so this step is really important to ensure the béchamel turns out well.

    Put the bowl back in the microwave and start it again at 600 watts for another 4 minutes. Repeat the operation and start it for the last 4 minutes.

    Mix the microwave-cooked béchamel well and use it for all your preparations.

Tips for Making Béchamel in the Microwave

The use of low glycemic index flour is recommended for healthy eating. If you have difficulty finding flour already mixed with inulin, you can mix 15 g of long-chain inulin with all-purpose flour.
