Grilled Sicilian-style eggplant and zucchini rolls.

An excellent cold dish, complete, suitable for multiple solutions, for finger food appetizers, as a starter, or as a second course.

Easy and economical to make, you can prepare it in advance and serve it at the right time. In this recipe, I used zucchini and eggplant, but it is also suitable with peppers

  • 2 zucchini
  • 2 eggplant (medium-sized)
  • 2 cups breadcrumbs (seasoned Sicilian-style see recipe)
  • as needed extra virgin olive oil
  • 1/4 cup water
  • 3.5 oz ham
  • 3.5 oz mozzarella
  • as needed mint
  • as needed dried oregano
  • 1 clove garlic
  • as needed pepper
  • as needed cherry tomatoes

Steps

Let’s start cooking

  • First, wash the zucchini and eggplant, and trim the ends.

    With the help of a mandoline, slice the zucchini thinly,

  • and slice the eggplant less thinly.

  • Heat a grill well, and cook the slices of eggplant and zucchini

  • Meanwhile, in the food processor’s bowl, add 1 clove of garlic, mint leaves (at least 10), 2 teaspoons of oregano, and 3.5 tablespoons of extra virgin olive oil, and blend.
    Pour the emulsion into a bowl,

  • Spread all the slices of grilled vegetables on a surface. Brush them with the emulsion.

  • Prepare the seasoned Sicilian breadcrumbs, and add 1 tablespoon of extra virgin olive oil and 2 of water. Mix the filling

  • Then, on each slice, put a little bit of ham, a little bit of mozzarella

  • and a small pile of breadcrumb filling.

    This dish can be stored in the fridge for up to 3 days, and take it out at least 30 minutes before consuming. It can also be frozen for up to 3 months.
  • Roll up the rolls and place them on a flat plate.
    Brush them with the remaining emulsion and transfer them to the microwave for 10 min

  • As soon as the Grilled Eggplant and Zucchini Rolls are warm, serve them with cherry tomatoes on top.
