The jar cooking sauce is an explosion of flavors and quick cooking. Quick cherry tomatoes, cooked in a jar, perfect for keeping a ready homemade sauce in the refrigerator. I grew up with my grandmother’s tomato sauce, but having a ready sauce with fresh tomatoes in jar cooking in just a few minutes is unmatched. A delicious cherry tomato sauce in jar cooking, cooked in six minutes with the jar cooking technique in the microwave. With these cherry tomatoes, the other day, I cooked ricotta meatballs and, with another jar, I simply dressed some spaghetti. Simply delicious, both recipes.  

For this recipe, you can use Pachino or Piccadilly cherry tomatoes, then add a little onion and, if you want, half a clove of garlic, herbs, and go cook with jar cooking in the microwave. What surprises is the taste they acquire if left to rest for a few days in the refrigerator, vacuum-sealed.

Ingredients for 1 jar of cherry tomato sauce

  • 10 cherry tomatoes (or Pachino)
  • Half shallot
  • 4 leaves basil
  • 1 clove garlic
  • 1 tbsp extra virgin olive oil
  • 1 pinch salt

What You Need for Jar Cooking

  • 1 Microwave
  • 1 Jar 500 ml with thick seal

How to Make Sauce in a Microwave Jar

  • Wash the cherry tomatoes well, peel and slice the garlic* and shallot, and pat the basil leaves with a damp cloth. Distribute everything in the jar and season with salt and oil. Clean the edges of the jar, close, and clip. Set the microwave to your tested power, I use 600 watts, for six minutes, insert the jar of cherry tomatoes, and start cooking.
    At the end of cooking, let the jar-cooked tomatoes rest for an hour. Just out of the microwave, they will seem raw, the rest will complete the cooking (during this phase, you will see how they continue to boil for a long time) and the vacuum will form.

    Now the jar-cooked sauce is ready to be stored in the refrigerator for up to a month or to be used in your recipes.
    To open the jar, just unclamp, put it in the microwave for 3/4 minutes, and start at the same power used for cooking. The steam push will open the lid easily.

Extra Tips for Cherry Tomato Sauce in Jar Cooking

If you don’t like the strong taste of garlic, leave it whole. Alternatively, you can use 1 oz of sliced red onion.

Peeled Tomato Sauce in Jar Cooking

If the season doesn’t allow it or if you don’t have fresh tomatoes, you can make a peeled tomato sauce, just use 9 oz of San Marzano peeled tomatoes, mashed with a fork.
