Potato Balls with Speck

Potato balls with speck a simple and delicious recipe very similar to potato balls with a cheesy heart. One bite leads to another! Loved by both adults and children, these are small spheres made by mashing potatoes and seasoning them with eggs, salt, and Parmesan. In this version, to make them more flavorful, I added speck, but you can also leave it out. Alternatively, you can add your favorite spices. There are numerous variations, fried, baked, or cooked in an air fryer. They are ideal to serve as an appetizer or side dish to complement meat and fish. Ingredients

  • 1.1 lbs potatoes
  • 2 eggs
  • 0.7 oz Parmesan
  • to taste salt
  • 3/4 cup cornstarch
  • 1 oz scamorza cheese
  • 1.8 oz speck
  • as needed peanut oil (for frying)

How to make potato balls with speck

  • Boil the potatoes in cold salted water until they are soft.

  • Drain and mash them well, then put them in a large bowl, add the oil, eggs, flour, and season with spices.

  • Mix well with your hands until all ingredients are well combined, creating a homogeneous dough.

  • At this point, take small regular pieces of dough and form them into circular shapes, placing a cheese cube inside.

  • Roll them in cornmeal and make sure it adheres well.

  • As the last step, heat the peanut oil and fry the balls until they are completely golden. Serve them hot and cheesy!

Storage and variations for potato balls with speck

They can be stored in an airtight container until the next day. Instead of scamorza, you can use a cube of mozzarella and add a pinch of nutmeg to the dough. If you don’t want to deep fry, you can cook them in an air fryer.
