Ingredients
- 2 black oval eggplants
- 0.85 cup tomato sauce
- 3.5 oz cured ham
- 1.75 oz smoked provola cheese
- 1 clove garlic
- as needed extra virgin olive oil
- as needed Salt
- as needed Pepper
- Basil (fresh)
- dried oregano

Eggplant Roll Recipe
Start preparing the eggplant rolls by washing and slicing the eggplants about a quarter-inch thick lengthwise.
Place the eggplant slices on the oven baking sheet and season them with salt and extra virgin olive oil.Bake them in a preheated static oven at 392°F for about 15-20 minutes.
Take them out of the oven and let them cool for about ten minutes.Place a piece of smoked provola cheese and half a slice of cured ham on each eggplant slice.
Roll the eggplant slice onto itself to form the roll.
Do the same with the other eggplant slices.Heat a couple of tablespoons of extra virgin olive oil with a clove of garlic in a pan.
Sauté the garlic for a couple of minutes so the oil absorbs the flavor; then remove it with a spoon.Add the tomato sauce to the pan.
Season it with salt, black pepper, and a bit of dried oregano.
Let it cook on low heat for 10-12 minutes.Place the rolls in the pan with the sauce and cook them for about 5 minutes, turning them after two or three minutes.
Finish the preparation of the eggplant rolls with a bit more dried oregano and a few basil leaves.

How long do they last?
You can store these rolls for 2 days, at most 3, in the refrigerator in an airtight container.
Alternatively, you can freeze them and store them for a couple of months.Can I use other varieties of eggplant?
Of course, as long as they are not too small. The round Sicilian ones are perfect, but they are hard to find in my area.
