Diet Chocolate Salami. Traditional and Bimby Recipe.
Today I give you a “bomb” recipe, who said that those on a diet can’t have a little treat? Well yes, sugar-free, but lots of fiber and plenty of protein.

- 3.53 oz almonds (or walnuts or hazelnuts or both)
- 3.53 oz dark chocolate 60-69%
- 1.41 oz erythritol
- 0.53 cup 0% fat Greek yogurt
- 3 egg yolks

- Parchment paper

Steps
Traditional preparation
Put the biscuits in your food processor and crush them coarsely: Transfer to a bowl and set aside.
Now put the nuts in the bowl and chop, leaving visible pieces. Transfer to the bowl with the biscuits and set aside. You can also use granules.
Roughly chop the chocolate, put it in a microwave-safe glass bowl with the sweetener and melt.
Now add the Greek yogurt and mix.
Once the mixture has cooled down, you can add the egg yolks and mix vigorously
At this point, add the nuts and biscuits, and mix well with a spatula. Spread a parchment paper sheet on a kitchen counter and place the mixture, flatten it with a spatula.
Then roll it up into a salami shape, twist the ends of the parchment paper like a candy
Cool the salami in the refrigerator until it becomes solid.
For a visual effect that makes it look real, sprinkle it externally with more erythritol,

Melt the chocolate: 3 min./122°F/speed 1.
Add the sweetener, yogurt, egg yolks and mix: 30 sec./speed 4.
Add the nuts and biscuits, and mix well: 30 sec./reverse/speed 3, using a spatula.
Remove the dough from the mixing bowl, place it on a sheet of parchment paper, flatten it with a spatula.
Roll it up into a salami shape, roll the ends of the parchment paper like a candy
Cool the salami in the refrigerator until it becomes solid.
To make it look even more real, sprinkle it with more erythritol,
