- 1.25 cups tomato pulp
- 1.5 oz Parmigiano Reggiano DOP
- 4 American cheese slices
- 1 tbsp extra virgin olive oil

Recipe for Baked Eggplant Pie with Ham and Cheese
Start the preparation of the eggplant pie by washing the eggplant and removing the top part.
Slice it into approximately 1/2 inch thick slices.
Arrange the eggplant slices on the baking sheet and season with salt and extra virgin olive oil.Bake the eggplants in a static oven at 350°F for about 15 minutes.
Meanwhile, season the tomato pulp with salt and black pepper.Assemble the pies: place the seasoned tomato pulp and grated Parmigiano Reggiano on an eggplant slice.
Continue with a slice of cured ham and a piece of American cheese slice or another melting cheese.
Repeat the process for 2 or 3 more layers.Finish the preparation of the pies by placing on the last eggplant slice a spoonful of tomato sauce and a bit of grated Parmigiano Reggiano.
Bake the eggplant pie with ham and cheese in a static oven at 350°F for about ten minutes.
