Eggplant Burger Recipe

An excellent vegetarian main course, it’s the modern version of the must-have Sicilian eggplant patties.

Perfect for kids who don’t like vegetables. The top is made more succulent, making them look like little pizzas.

Initially, I was unsure whether to call this dish eggplant pizzas, but I decided on ‘burgers’ to appeal more to young people.

Enjoy them cooked in a traditional oven or microwave crisp mode, both in summer and winter.

They have a surface that makes them enjoyable for both adults and kids.

Ingredients

  • 14 oz eggplant
  • 1 egg
  • 3.5 oz scamorza cheese
  • 1 cup cup breadcrumbs (seasoned Sicilian style, see recipe)
  • 2 tomatoes (ripe)
  • to taste salt
  • to taste pepper
  • to taste extra virgin olive oil (for brushing)
  • to taste oregano

  • 1 Cutting Board
  • 1 Non-stick Baking Tray
  • 1 Oven

Steps

  • Cut the eggplants into cubes with the skin on.

    Spread them on a baking tray with parchment paper underneath. Season with salt, pepper to taste, oregano to taste, and a drizzle of extra virgin olive oil.

  • Bake at 355°F (180°C) with fan for 20 minutes.

  • Or microwave in crisp mode for 15 minutes

  • Once cooked and cooled, place them on a cutting board and chop them with a knife, forming a mince. Transfer them to a bowl, with the egg,

  • seasoned Sicilian breadcrumbs, and knead.

  • Form 4 balls, grease a baking tray with a little extra virgin olive oil, place the balls on it,


  • cut the provola into cubes, and place the cubes on each ball.

  • Press the ball with your hand, forming the burger.

  • Cut a tomato into pieces, and place it on top of the provola, like a pizza.

  • Bake in a preheated fan oven for another 10 minutes, or in a microwave crisp mode for 5 minutes.

  • If you don’t want to turn on the oven but prefer to cook the burgers in a pan, don’t immediately add the provola and tomato cubes. Cook the burgers on one side for 3 minutes, then flip them and…

  • Only after flipping, add the provola and tomato cubes. Complete the cooking with a lid at low heat until the provola has melted.
