Ingredients

  • 2 eggs
  • 250 g mascarpone
  • 250 g ladyfingers
  • 50 g unsweetened cocoa powder
  • 4 coffee (cold espresso shots)
  • 70 g sugar
  • 6 strawberries (optional)
  • 40 ml water (for pasteurization)

Steps

  • Take the Mascarpone and eggs out of the fridge at least 30 minutes before preparation

  • Separate the yolks from the whites then transfer the yolks to a bowl or a stand mixer and beat them with the whisks, meanwhile heat 40 ml of water with 60 g of sugar in a small saucepan, up to a temperature of 250°F

  • at this point add the water and sugar syrup to the whipped yolks and continue to whip at high speed until they become nice and frothy.

  • Now that they are well whipped and pasteurized, combine them with the mascarpone, little by little using a spatula and making rotating movements from top to bottom to incorporate air and not deflate the mixture.

  • separately, beat the egg whites until stiff, then slowly add them to the mascarpone until you get a smooth and homogeneous mixture, gently combine the two mixtures with a spatula with movements from top to bottom so as not to deflate the mixture.

  • Compose the tiramisu in a glass or jar like this: from the bottom of the glass make a layer of soaked ladyfingers, then pour a layer of mascarpone cream.

    Repeat the sequence then a layer of ladyfingers previously soaked in coffee, a dusting of cocoa, then pour more mascarpone cream.

  • Dust with cocoa the tiramisu in a glass and let it rest in the fridge for at least 1 hour.

    Then form a layer of previously soaked ladyfingers, a dusting of cocoa, then pour more mascarpone cream.

Variations

Lemon Tiramisu, simply make a syrup for the ladyfingers with limoncello in these doses: for every 3.5 oz of water, use 1.4 oz of sugar, heat by mixing, only when the syrup has cooled, add 1.0 oz of limoncello or limoncello cream. For the cream, simply add grated lemon zest to the base cream.


For the fruit tiramisu, especially with strawberries: prepare a syrup to soak the ladyfingers like this: for every 3.5 oz of water, use 1.4 oz of sugar, heat by mixing.

Only when the syrup has cooled, add 3.5 oz of fruit juice or fruit centrifuge.
For the cream, make the base cream then alternate layers with fruit salad
In both cases, you can dust with white chocolate flakes, pistachio granules, or shredded coconut.

This dessert can be stored in the fridge for up to 2 days, do not freeze
