Bruffins are as soft as muffins but chewy like brownies! A truly unique recipe that I absolutely recommend you try. My brownies muffins are the most classic version, with cocoa, but if you want to experiment, try adding a tablespoon of instant coffee!

Ingredients for Cocoa Brownies Muffins (Bruffin)

  • 1 cup butter
  • 1 cup sugar
  • 1 cup unsweetened cocoa powder
  • 2 teaspoons Instant coffee (optional)
  • 1 cup all-purpose flour
  • 4 Eggs
  • 2 teaspoons Vanilla extract
  • 1 pinch Salt

  • Begin preparing the cocoa brownies muffin bruffin by mixing all the dry ingredients, including the pinch of salt, in a bowl.
    Mix well and try to break up any lumps of cocoa and flour.

  • In another bowl, beat the eggs with the sugar until they double in volume.

  • Add the vanilla extract to the egg and sugar mixture.
    The seeds from a vanilla bean are also good if you have them available.

  • Melt the butter in the microwave for a few seconds or in a small pan over low heat and let it cool slightly.
    Add it to the rest of the liquid ingredients and mix well.

  • At this point, you can add the dry ingredients to the wet ones.
    Do this in stages, fully mixing everything before each addition.

  • You should achieve a smooth and fairly thick batter.

  • Transfer the batter into the prepared cupcake liners filling them 2/3 full.
    You can use a spoon, a scoop, or a piping bag.

  • Bake the cocoa brownies muffin bruffin in a preheated static oven at 350°F (175°C) for about 25 minutes (do the toothpick test before removing from the oven).
    Let them cool for at least 20 minutes before enjoying.
