The Sweet Sicilian Watermelon Jelly. Traditional and Thermomix recipe.
It is a fresh, delicate, and light dessert. Its origin dates back to the Arab domination in Sicily and then towards the end of the Late Middle Ages by the Albanian population that settled in the Palermo hinterland.
This dessert is widely consumed by us Sicilians during the scorching Sicilian summer.

What we need to make
- 3.3 lbs watermelon
- 3/4 cup powdered sugar (or 25 of stevia or 100 g of erythritol)
- 3/4 cup cornstarch (Or tapioca starch or rice starch)
- to taste ground cinnamon
- 10 edible flowers (jasmine or orange blossom or the grated zest of 1 orange)
- to taste dark chocolate chips (and/or pistachio crumbs)

- 1 Blender
- 1 Strainer
- 1 Pitcher 1-liter
- 8 Molds
- 1 Pot
- Plastic Wrap
- 1 Spoon wooden
Steps
The Sweet Sicilian Watermelon Jelly
Cut the watermelon in half, and extract the pulp needed for the recipe, then after removing the seeds, blend the pulp.
At this point, strain the juice gradually and collect it in a jug.
In a pot, combine the powders and mix them well together. Gradually pour the juice, starting with about one glass.
Mix well and ensure no lumps form.
Once you have a smooth and creamy mixture, pour in all the remaining juice.
Add the jasmine flowers or, if unavailable, the grated organic orange peel to the mixture
Place the pot on the stove over low heat and stir carefully until the watermelon jelly becomes viscous enough and takes on an intense color, which will take about 10 to 15 minutes
After this time, remove the jasmine flowers, take the jelly off the heat and put it into molds or a single pudding mold, and cover with plastic wrap.
Let the watermelon jelly cool in the refrigerator until it reaches a more or less pudding-like consistency, and finally, garnish with a sprinkle of cinnamon, a few more chocolate chips, or pistachio crumbs before serving.
Here is the ready Sweet Sicilian Watermelon Jelly
Cut the watermelon in half, and extract the pulp needed for the recipe, then after removing the seeds, put it into the jug and blend: 10 sec./reverse/speed 5. Strain everything with the help of the basket or a strainer and collect the juice in a pitcher.
Put the watermelon juice, sugar, jasmine flowers, or grated orange zest, and starch in the jug, cook: 15 min./Varoma/speed 1. Transfer to 8 molds or one large pudding mold, and let it cool.
When it is warm, cover with plastic wrap, then let the watermelon jelly cool in the refrigerator until it reaches a more or less pudding-like consistency, and finally, garnish with a sprinkle of cinnamon, a few more chocolate chips, or pistachio crumbs before serving.

Variations:
In some cities of Sicily, this fantastic dessert has its variations, for example, integrate a glass of blood orange juice into the mixture, removing the same amount of watermelon juice, or add almonds, cloves, orange blossom water, vanilla, and various candied fruits.
