Today, I offer you a light version of a plum-cake without sugar or fats. To sweeten, I will use a little sweetener and a few strawberries that will create a softness inside that will send you into ecstasy.
Great for breakfast or snack for both kids and adults.

- 2 cups strawberries (or other fruit to your liking)
- 1/2 lemon juice
- 1.75 cups all-purpose flour (Or low G.I.)
- 1 packet vanillin
- 1/2 lemon zest (grated)
- 1 packet baking powder
- 1/3 cup stevia (Or 120 erythritol)
- 2/3 cup yogurt (plain, strawberry, or Greek)
- 3 eggs

- 1 Stand Mixer
- Parchment Paper
- 1 Knife
Steps
Diet Strawberry and Yogurt Plum-Cake
First, preheat the oven to 350°F (static mode). Squeeze a lemon and collect half of the juice.
Starting with the raw materials, it’s important to choose quality and organic ones.
Wash and slice the strawberries, then place them in a bowl or plate with the lemon juice.
In the stand mixer, add the sweetener, eggs, and grated lemon zest, and start to whisk.
Once the mixture is whipped, gradually add the flour and continue whisking. Add the vanillin and yogurt, and when these ingredients are well combined, add the baking powder.
As soon as the mixture appears smooth and homogeneous, turn off the stand mixer.
Pour half of the mixture into the pan, add half of the strawberries. Complete with the rest of the mixture, and decorate with strawberry slices to your liking. Place in a preheated oven for 20 minutes at 350°F (fan-forced).
Check the cooking with a toothpick; if it’s still wet, extend the baking time a little, otherwise turn off the oven, take out the pan, wait for it to cool, then remove the plum-cake from the pan, and dust with powdered sugar.
Insert the butterfly into the bowl, then add the sweetener, lemon zest, and eggs. Whisk for 3 minutes at speed 3. After this time, with the butterfly still running at speed 3, gradually add the flour through the lid and continue whisking for another 3 minutes at speed 3.
Pour half of the mixture into the pan, add half of the strawberries. Complete with the rest of the mixture, and decorate with strawberry slices to your liking. Place in a preheated oven for 20 minutes at 350°F (fan-forced).
Check the cooking with a toothpick. When you take out the pan, wait for it to cool, then remove the plum-cake from the pan, and dust with powdered sugar.
