- 1 2/3 cups all-purpose flour
- 3 eggs
- 1/2 cup milk
- 1/2 cup sunflower oil
- 1 packet instant yeast for savory preparations
- 3/4 cup Grana Padano cheese (grated)
- 3/4 cup mozzarella cheese (grated)
- 1 fresh spring onion
- 3 1/2 oz cooked ham (diced)

Start the preparation of savory muffins by whisking the eggs, sunflower oil, milk (I used whole milk), and grated Grana Padano in a bowl. You need to achieve a homogeneous mixture.
Sift the all-purpose flour and instant yeast for savory preparations directly into the bowl of liquid ingredients. Mix with a spatula until the batter is smooth and lump-free.
Meanwhile, cook the peas: you can boil them for 5 minutes or cook them in a pan with a little olive oil for 10 minutes. I cooked them in the microwave with a couple of tablespoons of water for 4 minutes.Continue the preparation by adding the mozzarella to the batter. I used grated mozzarella; if you use a whole one, cut it into cubes a couple of hours before and let it dry on a sieve or colander.
Clean and chop the spring onion using also the green part.
Add it to the muffin batter and mix with the spatula until it is incorporated into the rest of the mixture.Also, add the diced cooked ham to the bowl and mix again.
Finish the preparation with the now cooled peas.
Mix one last time with the spatula to blend them into the batter.Transfer the batter into the prepared baking cups, filling them two-thirds full. You can use a spoon, a pastry bag, or an ice cream scoop.
With these amounts, you will get 12 muffins.Bake the savory muffins in a preheated static oven at 350°F for about 25 minutes.

Sure, use 125g (the classic jar).
