Ingredients for Grandma’s Chicken Salad
- 8.8 oz chicken breast (thinly sliced)
- 1 cup cucumbers (already cleaned)
- 3.5 oz red Tropea onion (already cleaned)
- 1 cup red bell pepper (already cleaned)
- 1.4 oz Grana Padano PDO (shaved)
- 1 tbsp pickled capers
- 2 tbsp extra virgin olive oil
- 1 tbsp chopped parsley
- 1 pinch fine salt

Preparation of Grandma’s Chicken Salad
Start by heating the cast iron grill pan over high heat. When it’s hot, cook the chicken breast 4-5 minutes per side, turning halfway through with kitchen tongs. Once cooked, place it on a plate to cool.
While the chicken cools, prepare the dressing: clean, wash, and dry the cucumber, and cut it in half lengthwise, then into small slices, and place it in a bowl.
Add the finely chopped onion and capers to the bowl.
Clean, wash, and dry the bell pepper, cut it into strips and small pieces, and add it to the bowl.
Shave the Grana and chop the parsley, set them aside for now.
Dice the cooled chicken breast and add it to the bowl along with the parsley and Grana shavings.
Add a pinch of salt, mix well with the help of two spoons, and enjoy! If desired, you can also let it rest in the fridge for half an hour before consuming it! Enjoy your meal!
