Ingredients
- 2 luganega sausages (about 10-12 oz)
- 400 g potatoes
- Half red onion
- 6 cherry tomatoes
- 1 sprig rosemary
- sage
- extra virgin olive oil
- salt
- pepper

Preparation
Wash the potatoes, peel them, and cut them into pieces.
Cook them in boiling salted water for 5 minutes, then drain and season with oil, salt, and pepper.
Roll the sausages on two skewers and prick the skin. Place them on a baking tray lined with parchment paper, adding the rosemary and 2-3 leaves of sage.
Distribute the potatoes around them, without overlapping (1).
Put the tray in a ventilated oven at 375°F and cook for about 20 minutes.
Meanwhile, clean the onion and slice it, wash the cherry tomatoes and cut them in half.
After 20 minutes, add the cherry tomatoes and onion to the tray (2). Put everything back in the oven and continue cooking for another 15 minutes, or until both the potatoes and the sausage are well-cooked.

Tips and Notes
You can use luganega sausages as I did, or regular sausages from your area.
If you don’t want to parboil the potatoes, you can put them directly in the tray, but make sure to cut them into smaller pieces or slices.
