Steps for Easy Mexican Beans
Start by rinsing the beans well with a colander and setting them aside.
In a skillet, crumble the sausage after removing the casing and fry it well. Set aside and keep covered with plastic wrap.
In the skillet, sauté a drizzle of olive oil with chopped onion, chopped garlic, chili pepper, and spices (paprika and coriander). Now add the beans and let them absorb the flavors for two minutes before pouring half a cup of hot water and the tomato paste.
Lower the heat, cover with a lid, and let everything simmer well for about 10 minutes, adjusting the salt.
Now we can add the crumbled sausage and cook everything for another 5 minutes.
Remove the lid and let it thicken slightly while stirring. Our easy Mexican beans are ready.
