Crumbled Cake with Lemon Cream

The crumbled cake with lemon cream is a dessert with a shell of crispy crumbled shortcrust pastry that encloses a heart of velvety and fresh lemon cream. Perfect for the end of a meal, really simple to make, it will amaze your guests with its goodness. You can replace part of the dough’s flour with blended dried fruit, it will be even crunchier, or, if the sour taste of lemon is not what you’re looking for, fill it with a classic custard. Ingredients for preparing the crumbled cake with lemon cream

  • 2 1/2 cups All-purpose flour
  • 1 egg
  • 2/3 cup Butter
  • 1/2 cup Sugar
  • 1 pinch Salt
  • 1 Lemon zest (grated)
  • 3 cups Milk
  • 1/2 cup Cornstarch
  • 4 Egg yolks
  • 3 tbsp Lemon juice
  • 2/3 cup Sugar
  • 1 Lemon zest (grated)

Preparing the crumbled cake with lemon cream

  • Start with the crumbled dough: quickly knead the butter, cut into very small pieces with the flour. Add the sugar, egg, lemon zest, and salt. Work until you get large crumbs.

  • For the cream, mix the egg yolks with sugar, cornstarch, and lemon juice. Pour the milk over the egg mixture, add the lemon zest, place on heat and cook until it thickens. Let it cool in a bowl, covering the cream with plastic wrap in contact.

  • Put 3/4 of the dough crumbs in a springform pan lined with parchment paper and press with your fingers to form the base. Pour the cream and cover with the remaining crumbs. Bake and cook at 356°F (convection oven) for about 45 minutes. Let it cool and sprinkle with powdered sugar.

Store the crumbled cake in the fridge during warm periods, under a dome at room temperature for a couple of days when the temperatures drop.
