The canapés with lumpfish eggs are a classic of the holiday season, but you can prepare them anytime. They are easy and quick to prepare, like in my recipe where I used ready-made mayonnaise, but you can substitute it with homemade mayonnaise. Try also the Valentine’s Day version, shaped like hearts and lighter, where I replaced the mayonnaise with fresh cream cheese.

- 1 lemon
- to taste mayonnaise, store-bought
- to taste lumpfish roe (caviar substitute) (red and black)

Steps
To prepare the canapés with lumpfish eggs…
Take the sandwich bread (3 rectangular slices) and using a 2-inch diameter cookie cutter, cut out discs.
Spread some mayonnaise on each disc, sprinkle the mixed peppercorns, and add both red and black lumpfish roe with a teaspoon.
Finally, take the lemon, previously washed, and cut small slices to place on top of each canapé.
Arrange the canapés with lumpfish eggs on a plate or platter and serve immediately.
Tip
I recommend preparing them just before serving, as the mayonnaise tends to form a light dry film. Alternatively, you can cover the canapés arranged on a plate or platter with plastic wrap, ensuring it does not contact the sauce.
