Ingredients for the Summer Lentil Salad

  • 8.5 oz canned lentils (weight considered after draining)
  • 1.5 cups cherry tomatoes
  • 1 cup small mozzarella balls
  • 1 clove red garlic
  • 2 tbsps extra virgin olive oil
  • 1 tbsp chopped parsley
  • 1 pinch fine salt
  • to taste black pepper (freshly ground)

Preparation of the Summer Lentil Salad

  • Start by washing and drying the cherry tomatoes, then cut them in half and put them in the bowl. Add the small mozzarella balls, also cut in half.

  • Finely chop the garlic clove, add it to the bowl with oil, salt, and pepper, and mix.

  • Now drain the lentils and pour them into the bowl, add the freshly chopped parsley, mix well, and the lentil salad is ready to be enjoyed immediately or after resting in the fridge!
