Ingredients
- 17.6 oz watermelon
- 17.6 oz melon
- 7.1 oz feta
- 1 red onion
- 1 fresh scallion
- 1 lemon (juice)
- 1 tsp mustard
- extra virgin olive oil
- salt
- pepper
- chili pepper
- mint
How to prepare watermelon and feta salad
In a bowl, put the extra virgin olive oil, lemon juice, a teaspoon of mustard, salt and pepper to taste, freshly chopped mint, and, if you like, a pinch of chili pepper.
Beat everything vigorously with a fork or a small whisk until you get a clear emulsion.
If you wish, you can put all the ingredients in a jar with a screw cap and then shake the jar to mix everything.
Set the emulsion aside.
Clean the watermelon, remove the rind, and get 500 g of clean pulp.
Cut the watermelon pulp into medium-sized cubes.
Do the same with the melon.
Peel it, remove the seeds and inner filaments, then cut it into cubes the same size as the watermelon.
Watermelon and feta salad, I used 500 g of watermelon, 500 g of cantaloupe, 200 g of feta, and then dressed it with an emulsion based on oil, lemon, chili pepper, mint, mustard, and herbs. I added a small sliced red onion and a freshly sliced scallion to the salad
Place the melon and watermelon cubes inside a large bowl.
Cut the feta into cubes and add it to the other two ingredients.
Clean the scallion and the red onion and slice both thinly.
Add the sliced onion and scallion to the bowl.
Dress the watermelon and feta salad with the previously prepared emulsion, mix, and serve on the table.
