Chicken with Bell Peppers and Potatoes in Instant Pot is one of my Italian Instant Pot recipes that are super easy and delicious. A main course loved by everyone, a classic of Italian cuisine that everyone prepares at least once in summer when peppers are in season!
After Chicken with Peppers and Olives and Chicken with Zucchini and Peppers in the Oven, I wanted to make chicken with bell peppers and potatoes in the instant pot because it’s tasty and cooks really fast.
In summer, I often cook air-fried roasted peppers or sweet and sour peppers in jar, and today I decided to prepare them in the instant pot with chicken and potatoes for a one-dish meal for everyone!

Ingredients
- 1.76 lbs skinless chicken thighs, raw
- 3 potatoes
- 1 bell pepper
- 1 onion
- 0.42 cup white wine
- extra virgin olive oil
- salt
- pepper
- rosemary
What You Need to Cook Chicken with Bell Peppers and Potatoes
- 1 multicooker
How to Prepare Chicken with Bell Peppers and Potatoes in Instant Pot
Wash the potatoes, peel, and cut them into medium-sized pieces. Place the potato pieces in a bowl of water to release the starch.
Meanwhile, wash and clean the peppers. Remove the stem and internal seeds and cut them into not too small pieces.
Peel the onion and slice it thinly.
Put a generous drizzle of oil in the instant pot and add the onion.
Salt it and stir, then sauté for 5 minutes.
When the onion is well browned, add the chicken pieces and cook them for another 5-7 minutes so that they brown on all sides.
Deglaze the chicken with the white wine and let it evaporate.
Add the potato and pepper pieces to the pot and stir to flavor.
Ensure that the chicken pieces remain in contact with the bottom of the pot.
Adjust the salt and pepper and add the rosemary.
Close the instant pot with the pressure lid.
Start cooking with the high pressure function (248-266°F) and cook for 20 minutes.
At the end of cooking, let the pot stay under pressure for another 10 minutes, then depressurize and serve immediately, piping hot.
