Ingredients for Cherry Charlotte
- 2/3 cups all-purpose flour
- 1/2 cups potato starch
- 1/2 cups sugar
- 3 eggs
- 3 tablespoons water
- 1 package vanillin
- 1 package baking powder
- 15 oz cherry jam
- 1 cup heavy cream
- 3 egg yolks
- 1/3 cups sugar
- 1 tablespoons potato starch
- 0.4 oz gelatin
- 1 package vanillin
- 1 cup milk
Preparation of the Cherry Charlotte
Separate the egg whites from the yolks and whisk the latter with the sugar, vanillin, and water. Use an electric mixer and beat until you obtain a fluffy mixture.
Gradually add the sifted flour and potato starch.
Then, beat the egg whites until stiff peaks form and fold them into the batter. Finally, add the sifted baking powder and continue mixing for 5 minutes.
Pour the mixture onto a baking sheet, previously greased and lined with parchment paper. Level it well and bake at 392°F for 10 minutes.
Turn the sponge cake onto a towel sprinkled with powdered sugar and remove the parchment paper.
Now spread the cherry jam over the base and roll it up, using the towel to assist. Let it rest in the fridge for 30 minutes.
Mix the yolks with the sugar, vanillin, and starch. Then pour in the warm milk slowly and bring the sauce to heat, without bringing it to a boil.
Add the softened and squeezed gelatin and let it cool.
When the sauce is firm, fold in the whipped cream. Set aside a little cream for decoration.
Cut the roll into slices of the same thickness and use them to line a mold, covered with cling film.
Pour the vanilla sauce into the mold and level it well. Cover with the film and let it rest in the fridge for 6 hours.
Turn the cake onto a platter and decorate it with dollops of the remaining cream and candied cherries.
Keep the Cherry Charlotte in the fridge until ready to serve.
