Ingredients for making apple and cinnamon muffins
- 3 eggs
- 1 cup plain yogurt (or fruit-flavored)
- 1 cup sugar
- 1 cup vegetable oil
- 1.5 cups all-purpose flour
- 1 pinch ground cinnamon
- 1 packet baking powder
- 2 Golden apples

Steps for apple and cinnamon muffins
First, peel the apples and cut them into small pieces. In a small bowl, place the apples with a teaspoon of sugar and lemon, so they remain clear and fragrant. In a large bowl, beat the eggs with plain yogurt, add the sugar, and mix well. Add the vegetable oil, continuing to mix.
Add all the flour and a pinch of cinnamon. Work well for a few minutes.
Using a small sieve, add the packet of baking powder, mix well until you obtain a homogeneous and creamy dough. Add the apple cubes to the dough and stir with a spoon, distributing them evenly. In a baking tray, arrange the paper cups and fill them about 2/3 full. Sprinkle the surface with a little brown or white sugar, creating a light golden crust.
Bake in a preheated ventilated oven at 356°F (180°C) for 20 minutes, or until the muffins are golden. Always do the toothpick test: if it comes out dry, they are done.
Remove the muffins from the oven and let them cool. You can serve them warm or completely cold; if you like, you can add a sprinkle of powdered sugar.
You can store the muffins in an airtight container or a tightly closed food bag. This way, they will stay soft for 2-3 days.
