Stuffed bread bites are small, very soft and tempting finger foods ideal for a buffet, to accompany aperitifs or pizza. We can fill them with cured meats, vegetables, personalizing them according to our tastes and needs. They are made with fresh yeast and are really easy. We can create truly tasty appetizers for all occasions.

Ingredients

  • 3.5 oz Type 0 Flour
  • 1/4 cup Water
  • 0.1 oz Fresh yeast
  • pre-dough
  • 17.6 oz Type 0 Flour
  • 0.4 oz Fine salt
  • 1 1/4 cups Water (room temperature)
  • 7 oz Prosciutto (chopped)
  • 1 Zucchini

Preparation

  • Let’s prepare the pre-dough (or starter).

    In a bowl, dissolve the fresh yeast in 1/4 cup of water, add the sifted flour, and mix to obtain a dough, which we will cover and let rise until doubled.

    Prepare the dough. Once the pre-dough has risen, transfer it to a mixing bowl or the bowl of a stand mixer. Add the flour, water, and salt and mix coarsely.

    Add the chopped prosciutto and zucchini and continue working the ingredients until you get a smooth, elastic but still slightly sticky dough.

    With the help of a little flour (or by oiling your hands) divide the dough into balls of about 1 oz each and place them on a baking tray lined with parchment paper, spacing them about 1 inch apart, and let them rise until doubled.

    Preheat the oven to 400°F.

    As soon as it is very hot, bake the stuffed bites at mid-height, for about 12-15 minutes, or until they are well puffed and golden; they can be served both hot and cold. Serve the stuffed bread bites also as tasty “snack breaks,” they will be a real success.
