I used a part of spelt flour and type 0 flour. But you can easily use just spelt flour or whole wheat or just 0 flour.

- 1 1/4 cups type 0 flour
- 1/2 cup spelt flour
- 2.7 tbsp sunflower oil
- 6 tbsp water

- 2 tbsp flaxseeds
- 1 zucchini
- 1 yellow bell pepper
- 1 clove garlic

Let’s start preparing the Savory Galette with Vegetables, pour the flours into a large bowl. Add the sunflower oil, salt, flaxseeds, and water, and knead briefly, just enough to have a homogeneous mixture.
Wrap the dough in plastic wrap and let it rest outside the fridge for 15 minutes.
Meanwhile, wash the zucchini and the bell pepper and cut them into pieces
Place them in a pan with a drizzle of extra virgin olive oil and a clove of garlic. Cook the vegetables over medium heat for 10 minutes, then turn off and let them cool.Take the dough and roll it out on a sheet of parchment paper to a thickness of 1/8 inch.
Fill the galette with the pre-cooked vegetables, leaving about 1 1/2 inches free along the edges.Fold the edges over the filling
Place the savory tart in the oven at 356 degrees Fahrenheit and bake for 20-25 minutes, until the dough is slightly golden and crispy.The savory galette is ready,
