So… if you also have a pandoro looking sadly at you from the pantry, today I save your day (and Christmas!) with my PANDORO LOG with TIRAMISU.
A very easy and super scenic dessert, prepared in 10 minutes without an oven and with very few ingredients: cream, mascarpone, and instant coffee. I promise it will be a guaranteed success at the table — creamy, delicious, and with that coffee aroma that immediately feels festive.

Perfect as a Christmas or New Year’s dessert, but also as a last-minute sweet when you need something “wow” without stress.

I often prepare it the night before, leave it in the fridge, and it’s even better the next day: the cream firms up and the pandoro becomes soft and fragrant, almost like a classic tiramisu but in a Christmas version.

Ingredients

  • 3 slices pandoro
  • 1 cup heavy cream to whip
  • 1 tablespoon instant coffee

Steps

  • Cut a slice of pandoro into 3 thin slices lengthwise.

  • Overlap the slices to form a rectangle and flatten with a rolling pin.

  • Whip the cream with the instant coffee and fill the rectangle with part of the filling.

  • Roll it up and cut two slanted pieces on the two sides of the roll, cover with the cream you set aside and place the two pieces, one on the side and the other on top.

  • Cover with cream and draw wood grain lines with a fork, dust with cocoa powder, and decorate with red berries and rosemary.

  • Store in the fridge until ready to serve.

For an even more delicious result, add some dark chocolate drops to the cream or a dusting of unsweetened cocoa between the layers. If you want an elegant touch, decorate the pandoro log with whipped cream and coffee beans or a cascade of chocolate shavings — guaranteed “wow” effect for the holiday buffet!
