- 3 fennel
- 1 tablespoon salted capers
- 1 cup cherry tomatoes
- dried oregano
- breadcrumbs
Steps
Clean the fennel: remove the tough parts and cut them into wedges or slices about 0.4 inches thick.
Blanch them for 5–7 minutes in salted water, then drain and let them cool slightly, I didn’t blanch them.
Place the fennel in a bowl, add the olives, desalted capers, a drizzle of olive oil, oregano, and salt, mix well then place them in a baking dish.
Add the cherry tomatoes, I only added a few, a sprinkle of breadcrumbs, and cook at 350°F for about ten minutes.
