Steps

  • Clean the fennel: remove the tough parts and slice into wedges or slices about 0.4 inches thick.

  • Blanch them for 5-7 minutes in salted water, then drain and let them cool slightly, I did not blanch them.

  • Place the fennel in a bowl, add the olives, desalted capers, a drizzle of oil, oregano, and salt, mix well and then arrange them in a baking dish.

  • Add the cherry tomatoes, I only used a few, a sprinkle of breadcrumbs, and bake at 356°F for about ten minutes.
