Crunchy outside, soft inside, they smell of caramelized apples and warm jam… in short, one of those recipes that ‘taste like home’, of a slow Sunday morning breakfast or an impromptu snack with steaming tea.

The truth is these puff pastry cannoli come from the classic ‘I only have a roll of puff pastry and two apples in the fridge’: I rolled them up, filled them with a bit of apricot jam (but peach or cherry works just fine too) and into the oven. In 15 minutes the kitchen smelled of Christmas and happy breakfasts.

These are simple sweets, perfect also for last-minute guests, for holiday sweet buffets, or to bring to school and the office — they keep wonderfully and are irresistible even the next day!

APPLE AND JAM CANNOLI

Ingredients

  • 1 roll puff pastry
  • 1 apple
  • jam
  • raisins
  • 2 tablespoons sugar
  • 5 amaretti

Steps

  • Peel and slice the apple, then cook it in a small pan with the sugar and 2 tablespoons of water for 5-10 minutes, until softened.

  • Unroll the puff pastry and divide it into 9 pieces.

  • Spread the pieces with jam, add the apples, raisins, and crumbled amaretti.

  • Bring one corner over the filling and cover by bringing the opposite corner onto the pastry.

  • Bake at 356°F for 12-15 minutes. Take out of the oven and dust with powdered sugar.
