Every time I think of parties, I crave a dessert that’s creamy, single-serving, and irresistible. And this caramel and walnut mousse has become my little Christmas obsession 😍.
It takes just a few minutes to prepare, it’s elegant to serve, and that mix of sweet caramel and crunchy walnuts makes you close your eyes at the first spoonful. It’s the perfect dessert after lunch or dinner, or as a tasty snack during a more sophisticated aperitif.
No oven needed, no rising required, just some whipped cream, a bit of homemade or ready-made caramel, and some coarsely chopped walnuts. That’s it: sweet, crunchy, and creamy all together.

Ingredients
- whipping cream
- 1 tablespoon powdered sugar
- 1.75 oz walnuts
- 0.18 oz butter
- 5.29 oz sugar
- 1.76 oz butter
- 0.85 cups whipping cream
- 3 egg yolks
- 1 gelatin sheet
Steps
Soak the gelatin in cold water.
In a small saucepan, melt the sugar until you get a golden caramel.
Remove from heat and add the butter, stirring quickly.
Add 0.42 cups of warm (not boiling) cream, stirring to combine.
Beat the egg yolks and incorporate them into the warm caramel, mixing well.
Dissolve the squeezed gelatin in the still warm mixture.
Let it cool to room temperature.
Whip the remaining 0.42 cups of cream and gently fold it into the cooled mixture.
In a small saucepan, melt the sugar until golden.
Add the butter and stir.
Pour in the walnuts and stir until well-coated, then let cool on parchment paper and blend coarsely.
Whip the cream with powdered sugar until stiff peaks form.
Divide it into two containers, add the walnuts to one and mix.
Layer the mousses in cups, alternating them, and decorate the top layer with walnuts.
Refrigerate for at least 2 hours before serving.
