It was created by chance, as often happens: I had a pack of cookies to finish, some mascarpone in the fridge, and the usual sudden craving for sweets. The result was a soft and enveloping cake, with the intense flavor of chocolate and coffee perfectly merging.

The great thing about this mascarpone and coffee cake with cookies is that it is prepared in minutes and bakes in the oven, so no chilled desserts to wait hours in the fridge. It’s perfect for breakfast, after lunch, or as a last-minute dessert when unexpected guests arrive.

It tastes a bit like tiramisu but with the golden crust typical of baked desserts. Inside it remains moist and melt-in-the-mouth, almost creamy, thanks to mascarpone and crumbled cookies that replace the flour.

I made it on a Sunday afternoon, just to try, and it was gone before it even cooled down. It’s one of those desserts that perfume the entire kitchen and instantly create a homey and relaxing atmosphere.

Ingredients

  • 5.3 oz chocolate
  • 1 cup mascarpone
  • 2 eggs
  • 1/4 cup sugar
  • 3 1/2 tbsps coffee
  • 3 1/2 oz cookies

Steps

  • Melt the chocolate in a bain-marie, prepare the coffee and set aside.

  • Beat the eggs with the sugar using a hand whisk, add the coffee, the chocolate and mix well, then add the mascarpone and work to obtain a smooth, lump-free mixture.

  • Crumble the cookies with your hands and add them to the mixture, mix well, then pour everything into a lined cake pan and bake at 356°F for about 30 minutes.

  • Do the toothpick test before removing from the oven, keep in mind that it is a moist cake but the toothpick should come out dry.
