It’s one of those easy and quick main courses that solves dinner in minutes and impresses everyone. You only need a few ingredients: chicken, almonds, soy sauce, and a bit of ginger for flavor. Everything is ready in a skillet in less than 15 minutes, no frying, no stress, and with a smell that makes you hungry just by smelling it.

A perfect idea even if you have guests, because almond chicken always pleases everyone. You can serve it with basmati rice or stir-fried vegetables for a complete and balanced one-dish meal.

Ingredients

  • 14 oz chicken
  • 1 fresh scallion (or white onion)
  • 2.8 oz almonds
  • 3 tablespoons soy sauce
  • 2 tablespoons white wine (or rice wine)
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • salt
  • pepper

Steps

  • Cut the chicken breast into cubes or strips, place it in a bowl with a tablespoon of soy sauce, the wine, and cornstarch, mix well and let marinate for 15-20 minutes.

  • In a non-stick pan without oil, toast the almonds until golden, set aside.

  • Heat some vegetable oil in a wok or large pan, add the chopped scallion or onion and briefly sauté.

  • Add the marinated chicken and cook over medium-high heat until golden (5-7 minutes).

  • Combine the toasted almonds and 1 tablespoon of soy sauce (you can add a bit of water if you want more sauce).

  • Mix well and let it season for 2-3 minutes, add sesame oil at the end for fragrance and serve.
