I confess: I named these treats COCOA CLOUDS with MASCARPONE because once I took them out of the oven they really did look like little delicious clouds, light as air, ready to be bitten into with a nice cappuccino. It’s one of those smart recipes that saves your breakfast: no butter, no oil, just simple ingredients like water, mascarpone, and cocoa. Basically, everything you find in the pantry or fridge.

I prepared them in a few minutes, without complications, and the result was surprising: soft, fragrant sweets perfect for serving at snack time. With a sprinkle of powdered sugar and a spread of Nutella, they immediately stand out, but I assure you that even plain, they disappear in no time!

COCOA CLOUDS with MASCARPONE

Ingredients

  • 2 eggs
  • 60 g sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2/3 cup flour (the one you usually use)
  • 1 teaspoon baking powder
  • 60 g mascarpone
  • Nutella®

Steps

  • Whisk the eggs with the sugar and a pinch of salt using an electric mixer.

  • Add the flour with the baking powder in 2 or 3 batches and the water, always mixing with the electric mixer.

  • Add the cocoa and continue mixing, also add the mascarpone, spatula everything and pour the mixture into a rectangular baking pan about 8 x 4.3 inches.

  • Bake at 356°F for 15 minutes, then remove from the oven and let cool.

  • Cut in half and fill with Nutella then sprinkle with powdered sugar and cut into slices.

Extra tips
If you want to make them even more delicious, you can add dark chocolate chips.
They keep well under a glass dome for 2-3 days, staying soft.
