Delicious thick pizza with cherry tomatoes and olives, it’s a sort of low focaccia for us Neapolitans, of course, it’s very soft and is prepared in one day with simple ingredients.
The thick pizza with cherry tomatoes and olives is very soft and tasty, perfect for dinner, it can be baked either in the oven or in a pan and of course, you can stuff it as you prefer, I only wanted to add tomatoes and olives and a sprinkle of oregano.
This sort of focaccia is delicious, it disappeared in no time, the whole family loved it, with just a few ingredients I had at home it turned out really well.

Ingredients
- 4 cups flour (the one you usually use)
- 1 1/4 cups water
- 0.18 oz fresh brewer's yeast
- 1/2 tsp salt
- cherry tomatoes (yellow or red)
- black olives
Steps
Pour the flour into a bowl, add the crumbled yeast and some water, mix well and add the salt and the rest of the water.
Knead well then move onto the pastry board and work it all by making some folds, one after the other, that is, make a rectangle, bring the short side towards the center and cover with the other side.
Make a ball and let it rest until it doubles, about 3 hours, or after one hour make another round of folds and let it rest, then pick it up and repeat the folds after another hour and finally let it rest.
After the time has passed, divide the dough into two parts and spread them on an oiled baking tray or on parchment paper or in a pan.
Make holes in the dough with your fingertips and add the olives and cherry tomatoes.
Oil again, sprinkle with oregano and bake in a hot oven at 450°F for about 12-15 minutes, it should brown on the surface.
