NEAPOLITAN ONION PIZZA in the skillet

Ingredients

  • 6 onions
  • pinches salt
  • tablespoons vinegar (if needed)
  • 2 cups all-purpose flour
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons vegetable oil
  • 1 pinch salt
  • 1/2 cup water

Steps

  • Pour the flour with water and oil into a bowl, add a pinch of salt and work everything well until you get a smooth dough and put it in the fridge.

  • Rinse the onions under running water to prevent tears, and slice them.

  • If you want to reduce the strong flavor of the onions and make them more digestible, blanch them in water and vinegar for about ten minutes after boiling.

  • Cook the onions in a large pan with oil.

  • Divide the dough into two parts and roll them out to a thickness of 1/8 inch, place one pastry in a greased pan, pour in the onions, and cover with the other half.

  • Cook until the pastry is golden brown, about 15 minutes in total, once well cooked on one side, flip it without breaking it and cook the other side.
