Ingredients
- 1 puff pastry
- 12 oz potatoes
- 7 oz bacon
- 2 eggs
- 9 oz ricotta
- 5 oz provola (or Asiago)
Steps
If you decide to use cooked potatoes, wash them and boil them with the skin on.
Once a fork can easily pierce the potatoes, run them under water, peel them, and cut them into small chunks.
Then spread the pastry in a pie dish, mine is small, about 8 inches.
Beat the eggs in a bowl, add the ricotta, salt and pepper, and mix well.
Cut the bacon into cubes and add it to the ricotta, mix again.
Prick the pastry, then add the cream of eggs and ricotta, add the potatoes and cheese pieces.
Bake in a preheated oven at 392°F for about 20-25 minutes.
