Ingredients

  • 1 cup all-purpose flour
  • 2 tbsps extra virgin olive oil
  • 2 tbsps powdered sugar (optional)
  • Half teaspoon baking powder
  • 3.5 tbsps milk
  • 1 pinch salt

Note: These cookies are without eggs, butter, and sugar and are very good, just baked they have a smell similar to bread.

Cold, sprinkled with a bit of powdered sugar, whether filled or not, I found them excellent.

Those with jam for me are perfect without sugar in the dough, my kids ate them and liked them, those without filling are sweet if sprinkled with powdered sugar.

Steps

  • Place the flour in a mound on a surface, make a well in the center and add the oil, sugar, salt, and baking powder, add the milk a little at a time and work the dough until you get a soft dough ball.

  • If the dough is too soft add a bit of flour or if too hard add a bit of milk.

  • Roll out the dough to a height of 1/8 inch and cut with your preferred shapes, I made them into cookies with and without holes.

  • Place the cookies on the baking sheet lined with parchment paper, bake for 20 minutes at 350°F keep an eye on the oven.
