The recipe for piadina cannoli with zucchini and mortadella is made with very simple ingredients, ready-made or homemade piadine, slices of mortadella, zucchini, and provola, they are filled, rolled, and cooked.

Ingredients

  • 2 piadinas (80 g each)
  • 3 slices pistachio mortadella
  • 2.8 oz smoked provola
  • 5.3 oz zucchini

Steps

  • Cut the zucchini into slices and cook them in a pan with a drizzle of oil or in the air fryer at 375°F for 5-7 minutes.

  • Place the slices of mortadella on the piadinas, add the zucchini, the provola in pieces, and roll up.

  • Cut each piadina in half, if you use large ones you can cut them into 3 parts.

  • Warm the rolls in a pan with the lid closed or in the air fryer at 375°F for about 3 minutes, just enough time to melt the provola.
