PUFF PASTRY BITES with POTATOES and BACON, scented with rosemary, an easy and quick recipe for dinner, appetizer, or snack for parties and buffets.

Simple and delicious, these puff pastry bites with potatoes and bacon were made because I wanted to use speck, but it was lost in the fridge, so I opted for the more visible bacon. Things that happen, and I don’t mind at all, as bacon is excellent with potatoes.

The recipe for puff pastry bites with potatoes is very simple. The potatoes are used raw, but you can also blanch them for a few minutes in boiling water after slicing them if you think they won’t cook through. I didn’t have any problems.

Perfect as an snack, also great as an appetizer or for parties. For kids, you might want to use cooked ham instead of bacon.

Quick puff pastries with potatoes, pancetta, and rosemary

Ingredients

  • 1 puff pastry
  • 9 slices bacon
  • 1 potato

Steps

  • Prick and cut the puff pastry into 9 rectangles.

  • Peel the potato and slice it. Aim for thin slices, about a couple of millimeters (about 1/16 inch); if too thick, it might be a bit raw, if too thin, it will burn.

  • If you want to be sure, heat a small saucepan with water, drop in the slices, and cook them for only 2 minutes before using.

  • Fill the center with a slice of bacon, potato slices, and grated provolone cheese using a large holed grater.

  • Fold the edges to form a sort of basket, then use a fork to crimp the edges; otherwise, it will puff up too much while baking.

  • Lightly oil and bake in a preheated oven at 392°F for 15 minutes. Keep an eye on the oven, and lower the temperature if necessary.

  • Just before taking them out of the oven, add rosemary and, if you prefer, an additional sprinkle of cheese.
